Sometimes We Just Need A Break

It's not every night that I can afford to slave over the stove. Don't get me wrong, there are a few nights a week that I spend 2-3 hours preparing dinner. But sometimes a girl just needs a break. This recipe is your break! I don't recall where I came across this idea, but the following is one of my go to "pantry diving" dinners. I almost always have these ingredients on hand, and if i don't, they are cheap and easy to pick up at almost any market. So tonight, relax and be at ease knowing that dinner will be ready in under 30 minutes.  This Asian inspired rice dish is sure to please the family and leave stomachs satisfied.

My Easy Beef And Broccoli Recipe

Ingredients

- 2 C white rice

- 1 Tbsp oil (vegetable or canola)

- 1 lb. beef (strips)

- 2 C broccoli florets

- 1/4 C Hoisin sauce

- 1/4 C French dressing

- 1 Tbsp ginger (minced)

Cooking Directions

- Cook the rice according to the directions on the bag/box.  Typically the quick/parboiled rice takes between 5-25 minutes as opposed to the normal 50 or so minutes required by traditional rice.

- Heat a large skillet to medium high and add oil.

- Season the beef strips with some cracked black pepper, and a touch of salt.  Brown in the skillet for approximatly 3 minutes, browning one side, then the other.

- Having already trimmed the florets down off the stalks, add the broccoli, Hoisin sauce, French dressing, and minced ginger to the skillet.  Mix thoroughly and cover.  Cook on medium for 5 minutes, stirring once. 

- Plate the rice and using tongs, top with the beef and broccoli.  Spoon over extra sauce until coated to your liking.  This should give you 4 servings.

- Sit down and enjoy!


Tweak This Recipe

I thought I would give you a few ideas to spark you imagination and show you that this is a great base recipe, but it doesn't have to stop here. Use your imagination and/or your families favorite ingredients to make it your own. Some things I have tried:

- Slice some carrots on the bias about 1/4 in thick and add in with the broccoli

- Use brown rice to give this dish a healthier feel. It is not for everyone but for those looking for an extra bit of nutrition and don't mind the earthy taste, have at it!

- Add 1 tsp of toasted sesame oil to your frying oil for an extra depth of flavor

- Replace the minced ginger with minced garlic. If you don't like ginger this will certainly make this dish more appealing, and if you like both, use garlic and ginger

- Try replacing the beef with chicken or even shrimp if you like.
